Baking/Pastry Classes in NYC?

You don't necessarily have to sign up for a degree program to take individual classes at many of the culinary institutes in NYC. Give the schools a call and see if they offer what it is you are looking for. Having said that, I would go to a bakery you love and talk to them about apprenticing (working for free for the experience and knowledge).
